I'd say it's the huge amount of sugar that is bad for you, the flour is more or less fine.

It's usually just more refined, user, like the various grades of sugar. You don't *need* cake flour, but it's nicer. You can pulse it in a blender/food pro if needs be.

I thought it was probably different since when I got a foreign recipe that needed cake flour, I used the usual one(wheat flour) and it didn't turn out like it should.
So I thought it was somesort of mixture of flour and something.

apparently you can take 2 tbsp out of a cup of all-purpose flour and replace it with corn starch and it works better than just using only flour. i've done it with some cookies and it tasted fine.

Will any starch do?
