I'm assuming they're stocking the kitchen with fresh food, only, they're lazy, and so the fresh stuff rots and nobody throws it away. Plus, they probably try and save money and use stuff for as long as possible.

The camera crew probably add in rotten/unsuitable for serving food into the pantry.

The chefs do unloading and prep so they should catch any abnormalities.

Eventually using shit thats gone bad, using dirty utensils, etc becomes just something they don't even think twice about

Not saying ALL restaurants, but many who don't have strict management or corporates making sure they do things right end up this apathetic
