Tart green apple and brie is great. Brie's also good with dried figs.

You can use it like cream cheese, but it's far more mild. I have a recipe for a sweet corn and parsnip soup that gets finished off with a dollop of mascarpone in each bowl.

any kind of dessert bro. tiramisu is an easy one to make and bretty good, and then there's a variety of cheesecakes where you can use mascarpone. it's not terribly useful in savoury dishes though

sounds good to me, might try it next time i get rye bread. brie does tend to go well with fruit anyway, especially grapes imo
does taleggio get an extra punch if you let it age in the fridge? i had a piece of pretty soft taleggio but i wasn't really impressed, it was kinda bland and yeasty
