Vindaloo, with it's Goa origin, and proximity to portugese influence as another said is sooooo awesome with pork and beef both. I guess the majority of the non-christian rest of India isn't too interested in pork, but the Brits liked it when they discovered it.

You can buy vindaloo simmer sauces in a jar, just chop up and brown some pork loin, then simmer it. Quick and easy way to decide if you like the flavors. That little bit of vinegar cuts the greasiness of the pork. Keep in mind that it's not as good as making it yourself, and won't have as much spice.

I really like Keralan fish curries. Some of the more interesting combinations of flavors I've had.

Is Korma a meme menu item at Indian restaurants? I like spicy food a lot but every time I go to an Indian place the Korma sounds so good and I almost always order it. They probably laugh at me because I'm the typical white guy who always orders Korma.
