i'm from madrid, if you go there go eat bocatas de calamares, cocidos madrileños and patatas bravas, there is a restaurant that I used to go when I was a kid called "El Rincón de Goya" that served some pretty insane cocido, but it was not cheap, it was quite fancy
stay away from touristy places, go to the greasy bars, they're the best and also cheapest, and if you speak spanish they won't screw you over with prices
also tapas ARE FREE, if they want you to pay for them it's not a tapa

i don't know much about their cuisine tho, I know they have good paella and pan amb tomaquet
desu if it wasn't because i have family in madrid i'd go to barcelona instead when I go to spain
anyway if you want amazing food i'd say Ávila (meat is insane) or the south (Málaga for example, you can eat very well in there, Paella de marisco, Espetos, comida de playa, vamos)
don't leave without trying Jamón Serran, Tortilla de patata and of course Paella.

We once ruled a big junk of europe so there are a lot of different dishes.
I would say the most classic one is the Wiener Schnitzel , on the sweet side we are most famous for either Apfelstrudel or Kaiserschmarrn.
Gulasch is also a big player but we share that with Hungary.
Wikipedia says Tafelspitz is a big think but honestly i call bullshit on that, or at least its not a common dish anymore!
