How to make oatmeal taste good without making it sweet? Would mixing in a little cottage cheese work?

Try toasting the oatmeal in a cast iron pan before cooking it in water, this improves both taste and texture

Oatmeal tastes fucking delicious if you get stuff that was actually bred for flavor rather than the standard stuff bred to have the highest possible yield. Try something like this, it's delicious without adding anything to it.

Cottage cheese sounds pretty nasty to me, but you might like it.

If you want to go a different route then you can make the oatmeal savory. Cook it with vegetable or chicken stock instead of water. Add diced or chopped veggies.

If you don't like sweet, salted is the traditional way to go. It's not my bag, but it has been a staple around the world. Toss in some berries while it is still cooking and salt to taste.
