Best oil for frying French Fries?

Duck fat.

I use olive oil and cut the potato vertically so that the fries are circular. Add salt, pepper and paprika and voila!

fries are about maximizing surface area crunch and even heat penetration of the oil.. I can't help but think you'd be missing out this way.

I dunno, they were pretty TAST-ee. Perhaps the loss of crunch was substantiated with the spices.

Do you do a "pre-cook" on your fries?

i use refined coconut oil and they turn out nice
