I completely agree. Italian cuisine is heavily reliant upon the ingredients. Carpaccio is one of the best examples of this : it's literally just meat with olive oil and parmesan, but it can be fucking divine.
OP, go to Italy once in a while. Rome is nice, but I'd recommend going to Piedmont and trying Carne Cruda, stuff like that.

Definitely Japanese.
Everything is based off either unabashed blandness masked as 'subtlety', which any other cuisine is mocked for, or one note fermented flavours.
But of course thanks to weebs Japanese cuisine is held up as some artifact of higher culture
