For me, it's kraft singles on white bread with a slice of bologna and some miracle whip. Wash it down with a nice tall glass of whole milk.

All go Well with White bread and Ketchup
Colby-jack. It melts well, has some of the tang of cheddar but it's smoother and holds up better to heat.
Honestly I will always head straight for a strong aged cheddar. The crumbliness and sometimes almost popping flavour brings me back for more.
I do also enjoy a Camembert, often with fruit chutney.
Any recommendations based on these? I love to try new cheeses.
