i like medium heat for only a light color at the bottom of the whites but alternatively use very high temperature to get crispy whites with still runny yolks if thats your thing.

Doesn't work nearly as good as light coat of butter at bottom of pan and breaking the albumin on top of the yolk gently with a fork and spreading it out a bit more to cook.

For actual fried eggs, not pan cooked eggs like you're talking about, you fill a shallow pot with frying oil, let it get to heat, then put the eggs in the oil. Then you take them out of the oil. Wa la.

Do it the Oriental method. High heat with lots of oil, make sure the pan is very hot before putting the egg in.

When you get those big bubbles you know you've don't it right. The flavour and texture is just the best.

Fry the bacon first, reserve about a teaspoon of the grease.
Drop yer egg on top of the grease, add pepper. Cover the frying pan, drop the heat to just under medium.
For 2 eggs, I give it two or three minutes. This gets you those crispy edges without a hard yolk.
