Spinach mushroom; I don't know why, but whenever I make a quiche that includes bacon, it always comes out greasy and tasting like nothing but greasy bacon. Yes, I pre-cook and drain the bacon. Doesn't matter.

Spinach mushroom quiche. The other one seems like it would be greasy and lacking because it has no balance, unless served with a side salad or something. Would still prefer spinach mushroom though.

Bacon and bacon grease has such a strong flavor that I feel it overwhelms anything it's mixed into/cooked with. Whenever I tried using bacon grease to cook anything, I could no longer taste what was cooked in it and just tasted bacon. It's not that good, in my opinion. You should just serve the bacon on the side instead, if you really want it.
