The only reason they were consumed by humanity in the first place is that there wasn't enough meat to go around. It was desperation.

Offal is the mud cookie of the animal.

Soak it in water in the fridge for a day, cut into reasonable pieces, then fry it in butter.
But don't fry it to shit. There's no fat in it and you don't want to overcook it.
Have it with some likewise fried onions and I guess potatoes and gravy or maybe some rye bread.

Boil it in it's own piss.

get some onions and garlic on olive or sunflower oil (i personally use molten swine fat)
until it all becomes golden white glossy, pour in the sliced kidney and mix it
(get rid of the piss)
Add a tiny pinch of cinnamon and a lot of pepper and just enough salt
And thats it

Liver and onions is good though.

With liver, I've also had good results adding a small pinch of anise along with s&p

Also it seems as the onion mash that is under all the pieces is the main dipping for bread.
After such a combo you eat the liver piece or the kidney, or whatever.
