The United States is pretty fucking top tier in the world when it comes to cuisines, despite the shit it gets from non-Americans. Every region, county and metro area has at least one unique dish that has international recognition, and Americans are second to none when it comes to comfort food.

But Louisiana wins for me without question. It has so many distinct dishes, cooking methods, cultural rituals surrounding food, and ingredients you'll not find anywhere else. East/Southeast Texas comes damn close but I never once had a bad dining experience anywhere in Louisiana for the four years I lived there.

Side note, I was raised mostly in California and used to think like this . But that's just fucking wrong. Quality of food is greater than diversity of cuisines any day of the week, it's just easy to convince yourself otherwise when your local cultures have become so fucking blurred no one knows how to specialize in any one thing, to perfect it over generations.

I hate TexMex and any Midwest Mexican food. It is usually very bland.

Chicago dogs are great. Chicago is good for gyros and Italian beef too. I'd have to say the best food is in the Southwest though. Chimichangas, carne asada, carnitas.

when I was living down in Pilsen there were many options. I don't have much so my go-to place was the Casa Cafe by Western and Cermak, 99 cent chicken tacos
By quality, one of my favorites is Xoctli, small place, corner of Paulina and Cermak, my old block. BYOB and handmade tortillas. 5 Rabanitos, 18th and Wood, high-quality place, the owner/chef was a protege of Rick Bayless, but it's a bit pricier, not at all unreasonable. Try the cochinta pibil tacos. If I were taking someone from out of town to impress them with local eats, this is probably where I'd go.
I'm not very well-plugged-in but that's my basic recommendations for Pilsen.

I live in Bucktown/Logan Square now, haven't really tried too much in the neighborhood yet, but there's a lot of Cuban and Puerto Rican options around here. I know Logan Square has a big hispanic heritage but I'm a bit of a homebody. I hear La Pasadita is a big deal, never been, no clue where it is.

That I've been to? Louisiana. Legit authentic Cajun is the greatest fucking thing I have ever eaten in my life. It's a real shame it's so hard to find anywhere else because it is an actual art to make. There is no such thing as "good Cajun".. its always either fucking amazing, or it's just absolute garbage. Probably why its not more popular because it's so hard to make and too many people have had crappy Cajun so there isn't a demand for it.

Fellow Logan Square dweller here, check out L'Patron, it's near Fullerton and Hamlin. Everything there is well-built and prepared but not fancy or gimmicky, and their tortas are honestly the best I've ever had.

Any coastal state that respects sea food. But there is one distinction: Louisiana. I'm from the east coast so this is not sandbagging, but if there was one definitive American cuisine that not only stands apart from all the rest it would be this states.
