Why aren't indoor grills more popular?
Because of fire.
Most of them are dreadfully under-powered and thus do a poor job at cooking.
There's also the obvious safety concerns about flames and smoke indoors.
The armchair hibachi's they have in American theatres are fairly progressive. People grill pork, beef, and vegetable during their movies.
You need a massive hood usually to cook anything with fire inside. I haven't seen a single middle class home with a real hood.
You ever heard of George Foreman?
These, basically cost and lack of performance compared to what you could get with even a basic gas or charcoal grill.

i have used my george foreman grill almost every day for the last 8 years and never cleaned it once (i got a trick)
