Start by griddling your Spam. Griddle pan gives nice lines which make it look pro. If your pan is dirty, no matter this just adds to the flavours. Pro Ck's call that seasoning Anons.

This is when you top the tortilla with your cheeses, griddled Spam ™, sliced jalapeons and the hot sauce.
The trick here is to get as even a distribution as possible.
That way you get a bit of everything in every mouthful.
Which is what you want Anons.

Place your other tortilla over the top and then wait for 3 or 4 minutes. Maybe prod it about around the sides with a utensil to make sure it moves around nicely and will be easy to flip.

Growing up a poor spic (and still am) we ate a lot of spam growing up because it used to be cheap. Haven't eaten the stuff since leaving home. I want to give it another try though, but can't find any recipe appetizing other than spam and pineapple.
Any anons know of any good dishes the utilize spam that have quality? I don't want the typical carbs/meat/cheese combo. That's not meant as jab at OP cause I'm sure his meal can be made and will be good. I just want to see if spam has more potential than, well, being spam.

I cut the spam in pieces, fry it, add teriyaki sauce and roasted sesame seeds. Put it on rice and eat with cress and salad.
