Throw chicken in crock pot for 6 hours with some stock and seasoning. Shred with fork. Add peppers and onions. 1 more hour. Toast hoagie rolls. Mayo (obviously) Mozzarella. Spread mayo, place cheese, add meat and peppers.

Be sure to get a good crust on the chicken before throwing in finely sliced onions.

Suggesting mayo on any type of cheesesteak automatically eliminates your opinion from consideration.
