Carrot cake probably, but I'd also say that roasted with a little sweet and sour (like balsamic and maple syrup or lemon and brown sugar) is pretty nice too.

Here's one I don't even know the name of, I just copied it from a friend.

>add white wine and turn the heat up
>add cream
>turn down heat until the sauce is yellow
>salt, pepper

Melt butter and brown sugar in a pan. Once well-mixed, add several dashes of pepper sauce, such as Tobasco, and then add in about a teaspoon of lemon juice. Finally, add just enough cornstarch to slightly thicken, and use the sauce to coat boiled and drained carrots, sliced approximately 1/3" thick.

Can vouch for this, my mother did up this exact dish except it was chicken thighs instead of lamb. Shit was so damn good, the raisins and the carrots were the high notes for me.
