Don't let yourself be fooled by its form. A Seele is much more dense and doughy. Apparently there are different types of flour used, I'm not sure about that.
Pretty regional, you only seem to find it in the Southwest. A friend of mine went to Berlin once and people thought him to be some kind of satanist freak when he mentioned his fondness for Seelen.
