There's a few other things you can do, like par-frying and freezing, but a little bit of vinegar in the water when you boil them doesn't add any extra time like the some of the more involved steps do.

Definitely, they are a whole fuckload more crunchy and stay crunchy and delicious for a while. The process calls for par-frying them and tossing them in the freezer, so they are always on hand and even taste better after freezing.

To not have cold water mixing with the boiling water. I wait a bit before putting them to boil for them to get at room temperature.

How is it silly? I time the water to start boiling as soon as the potatoes are at room temperature, so I dont lose the heat.

I mean, I would just turn the heat on high so I don't have to time the boil or dry the potatoes. Temp might go down a little but it will bounce back up pretty quickly. Your way works though so it probably isn't worth arguing over.
