First time fries

Here is my first attempt for fries. I soaked them in water then boiled them with salt and vinegar.

For how long on each? So boil then fry?

First batch of frying. I am frying twice. They have to sit for 30 minutes according to the recipe.

Frying twice sounds like too much work. I would like a recipe where I can fry once then maybe bake them the rest of the way.

I kept the cut potatoes in water as I was slicing them, and I boiled the potatoes in the water, vinegar, and salt mixture for 5 minutes.

Yeah it is a bit of work, but right now I have the time. 15 minutes til I can fry again, so will post updates then.

I don't have a slotted (spoon?) like that. Looks helpful.

So much work for some fries.
I just cut them into chips(round thin slises) soak them in salted water for 30min and fry them. They are perfectly crisp every time no need to waist extra time.
For normal fries just 1 fry and thats it. Not the best but hey i dont want to spend 2h frying potatoes.

Sounds simple and good, but for this I wanted to try the long method.

I think the long method is good if you freez them afther the fist fry and make lots, so you can have for later.
Wanted to try the 2fry method but too lazy.

Fries turned out well. Pretty crunchy/crispy. I am not use to the potatoes over here, but maybe could have turned out a little better if they were russet like. Definitely good though.

They seemed pretty good, but I have not made them the way with only one fry step. They were definitely crispy and crunchy though.

Best I ever had were Belgian.
No really big secret to making them.
Peel the potatoes, cut in long fries.
The special trick is use beef fat or ox fat (ask you local butcher just to see the look on his face)
Next part you need a cooking thermometer.
Get your fat to 135 to 140 C
Fry for 6 minutes
(don't go under 130)
Remove from fat and drain and rest for 10 minutes.
Bump up the heat to 160 to 175
Fry for 3 minutes
Remove shake and salt when hot.
