I usually get the cento whole peeled and squeeze em up by hand.

Canned tomatoes are way superior to fresh for sauces. Even if I grew my own I would can them before use.

This, the whole tomatoes are better than the crushed ones.

I think they add something to the crushed to keep them from sticking together or something.
