If your tastebuds aren't ruined from processed food and soda, celery has a fair bit of flavor and it even tastes saltier than other vegetables. Plus, if you don't just throw the celery leaves away they have a nice flavor too.

What are you even talking about? I can actually taste the flavor of celery so I should've been wiped out? Dairy cows are docile because it was originally a better deal for them to be taken care of by us than struggling to survive in the wild. We haven't fucked up the concept of evolution, that's like saying something is "unnatural". We're part of nature so everything we do is natural, and natural doesn't necessarily mean good.

Sure. Broccoli, carrots, leafy greens, cucumbers, cabbage. Celery has a noticeably saltier taste to it, for me anyway.

I never said celery was the most flavorful, but it does taste saltier than other vegetables. Not the same as just adding salt to other vegetables though. Celery just has a kind of slightly earthy, grassy flavor but still tastes "clean". It's fine if you don't like it, but if you're going to try to convince me it's bad and that I shouldn't like it, that's kind of silly.

I make mirepoix for at least three meals a week, it's just essential for most things. I'll switch out the carrot for a pepper if I am making spanish/mexican.

While experimenting with étouffée recipes, I actually found that altering the portion of celery had an incredible effect of the overall flavor of the dish. Being able to distinguish itself, as a distinct taste, between onions and bell peppers would imply that it certainly adds a strong element to any food. Disregarding something as crucial as celery because "it's not worth the effort" probably means you have poor work ethic or a shit palette.

Sure, you can use it for both of those.
