uhh... you posted a picture that exactly describes what antimatter is and how its diferent from matter... Its got negatively charged antipositrons where positively charged protons should be and positively charged positrons where negatively charged electrons should be.

Antiparticles have opposite charges and spins. When they touch matter both the matter and antimatter are annihilated.

mass-energy, however, is conserved. an electron/positron can annihilate into energy. and a high energy photon can "end its life" so to speak by producing an electron/positron pair (charge here is conserved since they have opposite charge)

It's simple, photons have a spin, so if a photon is spinning opposite the current photon (or field of photons) being measured it is said to be called an antiphoton.

If you look at the explicit construction of the Dirac theory of matter (the one that works and predicts antimatter), the nature of there being antimatter comes from the fact that the theory must be symmetric under Parity.

If you follow the Weyl/group-theoretic construction of the Dirac equation, you notice that if you just tried to include matter, then this matter is a) massless, b) chiral, and c) not symmetric under Parity. The solution is to mix the chiral and anti-chiral components together. This resolves the issues above and generates antimatter.

Energy can be created and destroyed to, for example quantum foam ,because it doesn't effect the rest of the universe.

You are coming in here with a high school education to one of the hardest fields of science. It's a bit more complicated than that. But for the most part energy and mass can convert into each other by Einstein's famous equation when the time comes.

Photon is it's own anti particle, annihilation results in electron positron pair production usually. The constraint being that the photons energy sum exceeds the rest mass of ordinary matter to be produced meaning even higher mass particles could theoretically be produced in some sort of 'photon atmosphere'
