There are almost no mycologists out there. You might not get rich but you'll damn near always have a job, especially with universities. Those jobs can pay exceptionally too.
Antibiotics are neither researched that much now nor is the research area of novel chemicals profitable with fungi. Soil microbes, plants and various mammals are researched for antibiotic potential but there's a reason we haven't added a new major family of antibiotic drugs to the list in nearly 40 years. There's not enough money there

3. Make a key for the fungi in the southern US

There isn't a reliable or complete key for any of the fungi in most of that region, my Biology II professor actually got hired for their work on a partial one.
