Low and slow. So braised or in a stock for stew or both.

Treat it just like any other beef stew:
-season pieces with salt and pepper
-brown them in your pot, working in batches if needed so you don't overcrowd.
-add beef stock, red wine, or both.
-braise until tender, adding some veggies partway though the cooking time. skim off and discard any fat that comes to the top while cooking.

I wouldn't skim the fat. It makes a richer broth or you can make it gravy like Irish style stew

Have you ever cooked oxtail like this before? It renders out a LOT of fat. I'm all in favor of keeping some fat in the broth but oxtail can render out an absurd amount of it. You either need to carefully trim a lot of it away from the tails first, or you need to skim. I suggest skimming since it's far less work.

If you seared it in a pan a lot should already be rendered there.

Searing is a fast process. Not much fat gets rendered out, there simply isn't enough time for it. Most of the fat comes out during braising.

Feel free to leave some fat in there for flavor. But unless you like a remarkable amount of fat in your broth you will want to do some skimming.

For the love of God, please sear it FIRST before braising.

Beat me to it. Was going to link this. Jamie seared it in the oven because he had such a big batch but you should be able to sear them conventionally in the pan with a smaller batch. I made it for my dad a few Sundays back over some pappardelle and some steamable green beans on the side.

I saw a video of a guy making steak and kidney pie with braised oxtails as the “steak” part. Shit was pretty much porn.
