Tomato soup cook-along

Hi Veeky Forums, I'm currently making my tomato soup recipe for a comfy night in. Here’s how I start:
Throw a bunch of peppered tomatoes and garlic cloves in the oven for a little less than an hour, covered in olive oil. This gives the soup a nice roasted flavor

Next, cut up a couple onions and caramelize them in a pot. The tomatoes have to keep roasting for another 15 minutes

Can you do tomato-basil instead?

It has basil in it, I’ll add it once the tomatoes are done

It’s a reusable baking sheet, I was out of parchment paper but it does the job.

I like to add carrots for sweetness.

Taking note since I'm growing everything you mentioned so far. This better be good

You think roasted fresh tomatoes or canned tomatoes would be better this time of year?

I have been meaning to buy a food mill to strain seeds.

Add onions and and a handful of basil, then blend again at a lower setting.

I live in the south where farmers are always growing new stuff, so I always use fresh. The farmer’s market comes in every Saturday and it’s still 80°F here. I’m sure it’s worth a shot if they aren’t available to you, though.

Yeah they had tomatoes at the market this weekend. I'm in D.C., I assume they were grown in a greenhouse given the time of year.

I just wonder for those outside of the near-tropics whether roasting canned tomatoes or fresh is better from oct-june when they are mostly out of season here. I can get "heirloom" tomatoes from Safeway but I have no idea if they would be good for this purpose. I also need to buy a blender! Anyone have luck with a cheap blender?

Add about a half a box of vegetable stock and a pinch of oregano. This is where you can get kind of creative with spices; I like to add red pepper, but it’s not necessary.

Guys, calm down.
Let's just agree that you're both cancer and be done with it.

Couple things I would have done differently.

-You had a perfectly good fond going when you cooked the onions which could have been deglazed with the puree tomato which would have added an additional depth of flavor. Little disappointed you didn't use it to your benefit.

-Pureeing fresh basil is a pretty taboo move. Dried seasoning, who cares. Fresh herbs like basil should be torn by hand and added to the final cooking process, or placed as a garnish.

Still, it's soup / 10. Would enjoy.

I just baked them. I’ve never tried burning them on purpose.

Canned san marzanos are the bomb.

It looks like a Silpat placed on a sheetpan that is too small to contain the Silpat.

So far, so good.
Interesting note: the blade assembly will screw into certain styles of small glass jars.
This means you have a very serious spice grinder. Like, tears the hell out of some garam masala type whole spices.
I have a Blendtech sitting in my cart that I just can't pull the trigger on.

In western WA state, I use canned San Marzano tomatoes winter through spring. From what I've tasted, greenhouse/hothouse don't compare in sweetness or tomato-i-ness to in-season tomatoes -including greenhouse heirloom varietals.

Most blenders will do this. Mason jars (regular, NOT wide-mouth) are what you want to use.

I should point out that price PLUS pic related was what sold me on this unit.
I read a lot of negative reviews on other units' plastic-made drives breaking.

I probably only use the thing once a month, but the first year I owned it it got some more serious usage. Milkshakes, smoothies, garam masala, soups, sauces, et al..
