Hey guys I was wondering if anyone could help me with a "recipe".
When I was younger my grandmother who was from Germany and come over after the war would often times cook noodles with eggs. I'm pretty sure they were egg noodles and she would cook them then fry them with eggs cracked into them.
It gave the flat wide noodles a really nice texture and they were quite savory. I cannot find any recipe or even photo of such a dish. I'm not a good cook and so far my attempts have never turned out like hers.
Maybe what you remember is pasta with carbonara style sauce. But with carbonara it is important to NOT scramble the eggs once they hhave coated the noodles. I very much doubt that eggs cracked into cooked pasta and then cooked and scrambled would either look good or have a decent texture. If anything cook the eggs beforehand and add them to the pasta later. The only dish that I (German here) resembles the one that you have described is Nudelauflauf (pasta casserole)

think you need to be a bit more specific. was she making a noodle out of eggs? or was she using a noodle and then mixing egg with the noodle? two very different things.

Only if you're American. In first world countries we call it pasta. Noodles are used in Asian cooking, and can be made from egg or rice.
Pasta is pasta, no matter the shape. Enjoy your diabeetus.
