That's a thing though. Jiro doesn't love sushi. He's institutionalized by it. If you watched the doc you'd know that he used his work as a piece of shipwreck from his destroyed childhood to stay alive. Jiro dreams of sushi is not a documentary about sushi. It's about Jiro and how much of a fundamentally and deeply broken human being he is.
