The issue with all their videos will always be time given how every oven is different. other than that the ratios seem ok so it should work. though it only looks like youre getting 10 cookies out of that.
no sometimes you need all the sugar listed, the salt helps it to make it less sweet, i know it sounds retarded but the sugar helps a lot while its baking to be soft. is this ratio ok? i cant really say.
now seeing my recipe it is kinda a lot of sugar, the salt is fine though.
just do this op the browned butter works much better, it will also be good if you bake your sugar as well, makes it taste much better.

>is this ratio ok? i cant really say. That's why I did some quick math to compare, your recipe looks fine. But the recipe you linked has the same amount of sugar while doubling the flour, butter, egg, etc. so it has less sugar per cookie. The recipe in the OP is going to be way too sweet.

270g flour 225g softened butter 225g brown sugar 2 eggs 5g baking soda 5g salt 350g chocolate chips
It's just a basic chocolate chip cookie recipe, but I've reduced the amount of sugar by 25%. You can use the full 300g of sugar if you want, but I find it just makes them way too sweet. 225g is plenty.
Try to find good chocolate chips that are lower in sugar, about 6g of sugar per 15g of chocolate chips. It can vary from 6 to 9g of sugar per 15g of chocolate chips from what I've seen and I like the lower sugar ones.
Eat them and dunk them in a glass of cold milk while they're still warm. Reheat them in a microwave for 5-10 seconds to get the butter and chocolate in the cookie soft again. Or bad things will happen to you.
