Did you fully open the oven (losing a lot of heat) before it was nearly done?

I didnt open the oven until they smelled done (they were).
I moved them onto cooling racks. The middles were already sunk in.

stick a tooth pick in to see if its cooked enough. if it comes out clean, It's done.
if you notice the cake pulling away from the sides of the pan, it's done
buy a oven thermometer to make sure your baking at the correct temp. keep it as near the center of the oven as possible
let the cake cool before putting your icing on

Never use a messy recipe.
