Imo no knead is way better than kneaded, folded, or stand mixer bread.

No-Knead > Folded > Mixer > Kneaded

How does no knead bread work?

it doesn't

It's all about protein (gluten) development. This happens best with time (overnight at very least), but you can speed it along by working the dough. No knead bread opts to let it happen naturally.

flour, water, salt
mix well
store in fridge for 18-24 hours
heat cast iron pot at 475 f for ~30 mins
gently roll dough into pot, cover, bake for approx 1 hour

so go buy one then, how much could it be? ten dollars? I've had mine for 20 years and they're so useful I bought another 6 years ago.

Jack made a no knead bread and it actually looked good. May have been the only thing he's ever done right.

I do it on a stone with a roast pan with a little water in at the bottom of the oven.

I get mold in my apartment easily. Will this hinder bread-making efforts?

Get some HEPA. Without any kind of forced air, you have 10x the suspended particulate of a typical home or office. Box fan and furnace filter will do if you want to be cheap.

Sourdough starter can mold eventually but single batches of yeast-added bread will be fine.

Try to eat fibrous foods in addition to these glue loaves, and move a bit, so you don't have appendicitis.

now i just hold the temp knob at ~400F and count to 30 and turn it off
