This is my first time posting here (usually on /pol/ or /x/ or Veeky Forums) and I don't really cook often, BUT I think of it my duty to carry tradition of my heritage so I've decided to make Baklava tomorrow.
Any hints for a beginner? Whats the green stuff on top i see in some pictures? Could i make a vegan version of this dish?? Thanks

Buy frozen phyllo dough.

1) buy frozen phyllo dough, you'll never be able to make your own correctly
2) pistachios
3) depends on the vegan -- my bf is vegan but eats honey (because bees are a vital part of the environment and are necessary for agriculture, and also they produce more honey than they can consume and in general removing honey doesn't hurt the hive as a whole, and can actually be beneficial to it). there are a few recipes on the internet for a vegan version (most use agave syrup, maple syrup, or some other type of sugar-based syrup.)

i recommend The Minimalist Vegan's recipe if you want to go that way, her recipes are usually solid

use cashew as the filling. if you use rose water DO NOT USE TOO MUCH MOTHERFUCKER.

work quickly with the pastry when it gets warmed up its a proper cunt to handle. cold bench cold hands etc. lots and lots of butter preferably ghee

the hard part is the syrup, each region has it's own syrup.

sorry, i should clarify that im keeping the honey. It's one of the only things that isnt vegan and is terribly good for you if its raw.
