This is a traditional British Christmas dinner and it's actually generally delicious as long as things aren't overcooked.

Don't have any pics but after à lot of appetizers and champagne we had foie gras and smoked salmon, with burgundy white and Alsace 2000 "late harvest".
Didn't care too much for the Capon and mashed veggies because I knew the cheese plate would be worth it : best swiss gruyère of my life, Vercors blue, aged picodon, morchellas cancoillotte, roquefort with Jura yellow wine and some Gevrey Chambertin.
For dessert two cakes from a family related M.O.F. (Google it).
I was recovering from an intestinal virus so it was a bit too rich for me but I had leftover cheese for breakfast .

Pumpkin mousse with roasted chestnuts, bacon and truffle oil.
Various green salads along with steamed broccoli, raddish and wild sprouts, tzatziki and dolma with vine leaves, all vegetables from our garden.
Main course was slow roasted duck which was marinating since yesterday in wine orange juice soya sauce and an assortment of herbs and spices. Side dish was rice with duck livers, chestnuts, raisins, pine nuts, cooked in duck fat and juices.
Right now we are going through an ekmek kantaif.

anons new and unprooved duck a l'orange recipe.

1 duck
2/3 cup turbanado sugar
2 oranges
3/4 cup orange juice
1 onion
1 shallot
1 celery stalk
1 fat carrot
1 cup white wine medium to dry
1 tsp rosemary leaves
1 sprig thyme
1 tbs grains of paradise
water as needed
kosher salt to taste
preheat oven to 500 gorillion degrees.
cut off excess duck skin and fat. begin to render in stock pot.
rouch chop onion celery and carrot.
brown veggies in rendering duck fat and butter if necessary.
add neck kidneys etc. feed liver to dog.
cover and render duck fat.
drain duck fat keeping solids, feed rendered skins to dog.
place solids back in stock pot, deglaze with white wine. boil five minutes stirring regularly. add rosemary.
add 2 ish cups water to make stock, turn down heat and simmer indefinitely.
peel zest from oranges. set aside.
supreme oranges. quarter shallot(s)
stuff duck with orange pith, shallots, sprig of thyme and three orange wedges.
pass remaining orange wedges around to the help.
score duck fat with knife.
place stuffed, scored yard bird in oven 1/2 hour.
make carmel from turbanado sugar and zest peels.
add orange juice to carmel. this will be unplesant for the cook. the peanut gallery will become instantly hungry from the smell.
turn down oven to tree-fiddy when the timer rings. bake 1.5 hours.
simmer orange gastrique until half or less volume.
strain stock and add to the orange gastrique until you have sauce. continue to simmer indefinitely.
broil duck 3-5 minutes to crispify skins.
remov yard bird. discard stuffings. place bird on serving platter. drain drippings into steel bowl.
optionally deglaze roasting pan and add to orange/duck sauce.
optionally add pan drippings to orange/duck sauce.
optionally, why not both?
coat duck in thin glaze of sauce. retain more for dipping.

I have 2 ducks in my freezer and a rotisserie cooker thing. I'll create a thread in the near future implementing this recipe, though I'll use orange marmalade because it creates a crispiness in the skin that can make people lose their minds.
