General Tso's chicken (zuo-zong ji-ding) was invented in Taipei. The US delegation had arrived for a week, and a top chef tried to serve every fancy specialty dish he could until he ran out of ideas, so he slapped together a Taiwanese-style (stirfried garlic and red pepper) sauce with fried chicken pieces. When he was asked the name of the dish, he made it up on the spot by calling out General Zuo (Tso in Hokkien), a famous soldier from the Fujian region which Taiwan was once a part of.

whoops, Zuo was from Hunan, where the Hakka-speakers of central Taiwan originate from. Regardless, the rest of the story is as such.
