They look like annelids. Some people might not like the texture change. It's like the difference between eating a whole chip and chip crumbs. It's technically the same thing but the texture isn't as good.

Nduja is far superior to pepperoni though. Really no comparison.

I do this for home pizzas, because I use thinly sliced deli chorizo. The slices are too big to comfortable eat to i just cut them into strips with scissors.

Any pizza with toppings should have a little toppings on it. Too much makes the pizza greasy, there needs to be a balance of cheese,vegetables and meat.

Recipes are extremely similar unless you're thinking of the mass produced chemical pepperoni style product in the US, except nduja is smoked.

How is that better? Pepperoni tastes good because it's a big circle of flavor that hits your tongue and then gives you more flavor as you chew through it. This pre-chewed shred shit ruins everything by trying to fix what was never broken.

Pepperoni is beef, nduja is pork. That's one hell of a difference right there.
