Braise a piece of pork well in some high smokepoint oil and put it the slow cooker. In the same pot caramelize 2 shallots and then deglaze with a little less than half a bottle of red wine. Cook away the alcohol and then add enough beef stock so that when you pour it in the slow cooker it comes halfway in covering the pork, should be about 1/2 - 1 liter. Add salt, pepper, some garlic and dried thyme. Now pour this into the slow cooker and let it sit on medium for 8-10 hours, depends on how tough your pork is. Remove the pork and mash it with a fork to make pulled pork. Strain the liquid, add a tablespoon of sugar and reduce it until it's half to a third of what is was originally, you should taste so it's not to strong. You can add some starch if you want to have a thicker sauce. Serve with cooked root vegetables.

Also you should flip the pork halfways though the cooking process.
