anytime someone tries a personal twist on anything, he screams and makes them go back to cooking it the ultra-traditional way it was done 400 years ago

The reality is most of the best ideas for food have already been executed. 90% of the truly experimental food had to preclude well established concepts that would've made them much better, but also less experimental.

Basically at this point in time, it's hard to do something truly creative that is also just a great dish in its own right.
