For some reason I've always thought Parasyte to be pretty Veeky Forums within the bounds of manga. It's pretty much a genre-definer and genre-defier within the medium. Same goes with something like Devilman with the same themes even, though that's due in part to its stellar artwork

The only anime that felt thematically coherent and complete to me on a level approaching a work of literature are a few short ones like FLCL and Cat Soup. Maybe Wasurenagumo which basically adopts the template of a Grimm fairy tale.

Longer works that I see mentioned often for "Veeky Forums anime" like Eva, Utena, Tatami Galaxy, LoGH feel more like the television they actually are to me because of the more obvious ways the serialized episodic form displays itself, like monsters/baddies of the week. It's strange that off the top of my head I can't pinpoint exactly what separates them in my mind from serialized literature like Dickens or, say, The Count of Monte Cristo (versus the loose Gankutsuou adaptation) except possibly characteristics that might stand out about the standard conventions used in anime as a niche subculture medium.

my personal conception of 'Veeky Forums anime' is not 'anime that feels like literature', but anime that can go toe-to-toe with some of what are generally considered great books in terms of artistic achievement. this is how i feel about all Veeky Forums (artistic medium of choice here). For that reason, I don't see any formal aspect as getting in the way of something being Veeky Forums (e.g. stock footage, episode templates, etc.)

Do you have any major gripes with Utena in terms of content? I can't imagine that anyone would seriously consider FLCL to be 'better' than SKU.

I guess I value a sense of coherence and sense of total conscious artistic control that is much easier to pull off in short form as an anime than it is in a written work, while at the same time I appreciate but put less stock in stuff like subversion and the use of symbolism and imagery in themselves.

I mean, for something like Utena the frequent use of stock footage and the "enemy of the week" format for a significant portion of the work, no matter how artistically justified, I can't help but view as a very noticeable response to the real-world financial and artistic constraints of a rigid televised medium, however well Ikuhara pulls it off, along with the unavoidable echoes of the many children-targeted cartoons that use the same surface techniques for purely commercial reasons.

In addition, works like Eva and Utena are responses to formulaic genres that don't quite fully escape the conventions, limits, and expectations of those genres by virtue of their very focus (for example, think about the idea of a "literary" superhero novel in terms of artistic achievement, no matter how well-executed). I enjoy magical girl and mecha, but using established genre conventions from magical girls and mecha automatically places a work in a more pulpy artistic context by their very premise. I do feel this is a bit narrow and unfortunate of a bias, but it's also undeniable the topic and genre of a work are subject to these kinds of cultural overtones and judgments.
