My answer would be, yes, there are lots.

The most obvious one is Kafka.

Someone like Joseph Heller really is VERY Jewish. You might not notice if from just reading Catch-22 but once you read his other stuff (especially Good as Gold, Closing Time, Picture This and God Knows) you see how much he is seeing everything "as a Jew" - it's never very far below the surface.
