There is a distinct difference between reading to expand your mind, and filling your head with useless scifi/fantasy world lore.

I don't read specifically for expanding my own mind off it, I'd call it more of an aesthetic thing. Reading for a good story, so to speak. (Not that that applies to most Star Wars books, but I can understand asking for good ones out of them, or just for good pulp stories)
I suppose this is a bit off topic, but it's enough to justify asking about this without needing "genre fiction" critiques.

Stover's stuff is the best of it imo. Even episode 3 was pretty great.
I've heard a lot of good things about the Republic Commando books.
The X-Wing series is about as fun and not insulting to your intelligence as Star Wars can get.

Oh, and don't read foundation, it sucks. It's one of these dusty old sci-fi that have nothing to offer to a modern reader, because there's no art in the prose, the characters are cardboard cut out, the technology is bland and unexplained and the basic ideas can be looked up on wikipedia.
