Here is a very good point of reference, it contains everything that actually makes up the mythology (not everything that is inspired or based on it, making everything relevant). Start with Le Morte D’Artur, and please be content with the fact that not everything is available to the English speaking public.

It is a pretty good reconstruction of what an Iron Age 6th century Romano-Celt Arthur might have been like
Filtered through the lenses of (i) heroic fantasy (ii) provides realistic interpretations of much of the mythology
The Pendragon Cycle is pretty damn underrated
Romance of the Grail: The Magic and Mystery of Arthurian Myth by Joseph Campbell
try Mallory's Le Morte, e.g. the edition illustrated by Anna-Marie Ferguson
I also enjoyed Deeping's Uther and Igraine, but idk how it compares to other more recent Arthur novels (I should add that this book is a prequel to Arthur in that it is about his father).
