You are correct that simulators are great for getting familiar with a track and learning reference points.
But you're wrong about driver training. Sims are one of the best tools for driver training. Drivers are able to train various skillsets and use their telemetry as a reference for progress.
And I say this from first hand experience. We use pic related to train various drivers from a beginner to semi-pro level.
