I don't mind him jumping around like that, what gets me is when he decides the best course of action is to throw the damn things point blank and just straight-up kill you because all however many of the projectiles hit you.

Should I be satisfied with an ATK Down -3.9% curse on my Cold Abyssal or keep grinding? Secondary is physical attack +12.7 which is useless too

Acceptable curses from Old HMPH are beast/kin, stamina and HP depletes. Or durability down, if you're fine with your weapon breaking if you cough on it.
