How do you know it rides better? Have you ridden it? Or are you just making up lies to get yourself to believe you're not just ruining a bike for the aesthetic.

Ive built several cafe and brat bikes.
Its always an improvement to be lighter.
And changing the bars makes improvement over control is most cases.
Then change fork fluids and springs. Improve brakes.
None of this is bad or different from what you would do to any bike.
Plus people like aesthetic things.
I do agree that some people do dumb things to bikes though.

I did 30 miles today between cities
it went from light snow on the roads to an arctic blizzard and fog so thick you can't see 50 yards down the road, and then back to tranquil again
was fun
would have been more fun if I had some thermals

what are the pants equivalent?
I'm imagining something like pull-over pants with elastic waists and ankles made of like... wind breaker material, I forget the name. I know they exist, something like track pants
