What do you mean "work"? They make the bar thicker and thus making your grip the limiting factor for a lot of lifts, that's what they're designed to do. So they do what they're designed to do, if that's what you mean.

but why wouldn't you just do weighted carries or hold on as long as possible on your last rep of deadlifts instead if you want grip strength?

I use them for exercises which already require me to be holding dumbbells at my sides; lunges, shrugs, standing calf raises. For those, they're great at working forearms.

But for exercises where you have to actually move the weights around, I feel like they interfere with the movements more than they help.
