Hemp seeds for protein and omega-3s, fruits and veggies for extra antioxidants and vitamin C and shit. Hemp seeds are fucking expensive but they might be worth using here and there. I've also been eating lots of pumpkin seeds since I've started checking out these vegan youtube channels. Way cheaper than hemp and great for zinc and magnesium.
Problem with plant Omega 3's is they're ALA. Your body only uses DHA and EPA and the conversion process from ALA to those is very inefficient so still eat fish or supplement your omega 3's regardless.

Fat is a mandatory macro nutrient, it won't give you lethal disorders. Dietary cholesterol has virtually no effect on serum cholesterol. Also simple carbs while being overweight give you diabetes.
