Potatoes have vitamin C, which is the main concern with not having fruits and veggies isnt it? Not that I would diet like OP, either.

Fiber. Moral, but most importantly, dietary.
And micronutrients, potatoes are good (great compared to other carbs), but you can do better.
And you're sort of low on protein (how many eggs are you eating, anyway), you'll need meat or fish for that, or switch from potatoes to lentils.

Potatoes skins are loaded with fiber. Eggs have tons of micros. 6 eggs a meals would be plenty of protein. Thats over140 grams a day for 3 meals.

Not sure but I read somewhere that you can survive quite well on a diet consisting solely of potatoes and buttermilk, maybe regular milk is okay too
