Calories in calories out, I'm actually enjoying it

Sometimes I change it up with a bounty, one bar is 134 which is 7pieces a day

How about my diet: 1000g of chicken, 330g of cord and 2-3 sips

Not enough protein. I'm not a shill for protein condsumption and I think it's mostly bullshit but I still would aim for 1g protein per kg of total bodyweight.

So as a adult male that's going to be anywhere form 75-100g per day.

But I'll still lose the weight and that's what mtters for now

I know the point you're trying to make, and some fitizens would argue that macros are also important. Calories, for pure weight loss purposes, are theoretically a good measure of how much energy you are taking in and using. In practice though things aren't labeled in terms of 'real' calories that your body will net after digestion.
As far as dieting goes I think common sense actually goes a long way (i.e. fruits and veggies good, candy and ice cream bad)
I also think people have diverse caloric needs even at similar activity levels, heights, and weights.

for a month, i consumed ~800-1000 kals, with very nutrients. i started shedding hair like crazy and balding, and it has taken months to regrow it.

This is incredibly unhealthy, builds horrible habits and I cannot emphasize enough how bad an idea this is.

You will lose weight, but you still shouldn't do this.
