I'm still a beginner so take my advice with a few grains of salt, but this seems kinda wonky.

Except for the coke, it's a good diet. There's some non-sense to it (no other grains, etc), but it's good.

In fact, it's pretty much what I usually eat, except that do not drink soda, and usually eat red beans e fresh raw cheese.

Except for the coke, both white rice and fresh OJ is very healthy. Chicken is kinda bonkers, but eating red meat only is a good way to assure you getting creatine, minerals, B vitamins.

Why would you want lower serotonin?

No. It's very similar glycemic index; when in combination to kidney beans it provides full protein profile (no protein source, but still significant).

Brown rice is a tad better, but is not like wheat flour/whole grains, it's much tamer difference.

Brown rice is slowing digesting and has way way more nutrients and fiber. That's why it's better for you than white rice. Just get parboiled rice if you like white rice more.
