After only 2 days that rice will taste like SHIT and the veggies will lose all the taste and freshness.

Bullshit. The rice, maybe, thats a stupid idea and a good way to get sick. But mashed sweet potato and broccoli stored in sealed containers in the fridge will reheat in a microwave and taste fine for 5 days easy.

Just make sure you mash some milk and a little margarine in the sweet potato.

I'm working as a maths graduate in a large city and generally can buy any type of food for lunch then something smaller for dinner. It tastes nicer than what I would make and is way more convenient.
